Less red tape, more great plates: regional partnership supports local small businesses during food truck season
It’s now easier than ever for your favourite local food truck to fire up the grill and safely serve your go-to summer snack.
A partnership between Lethbridge Fire and Emergency Services (LFES), Coaldale & District Emergency Services and the Taber Fire Department is streamlining inspections for Mobile Cooking Operations, commonly known as food trucks. Through this shared model, operators only need to complete one annual fire inspection to operate in Lethbridge, Coaldale and Taber.
Launched in 2025, the program was designed to support the growing number of mobile food vendors serving festivals, markets and community events throughout the region. In its first year, approximately 60 food trucks participated. The program is on track for similar success in 2026, with about 40 inspections already completed.
“Food trucks are a valued part of our local economy and community events,” says Neill O’Grady, Fire Prevention Officer with LFES. “This partnership helps small business operators by cutting down on red tape between communities, while still ensuring safety for both operators and the public.”
By reducing regulatory duplication, the partnership allows vendors to focus on their business and regional Fire and Emergency Services can maintain consistent fire safety standards across southern Alberta.
The impact is especially visible at popular events like Foodie Fest in downtown Lethbridge, an event hosted by the Lethbridge Downtown BRZ. With streamlined inspections completed ahead of the season, operators can arrive ready to serve summer crowds.
Food trucks present unique safety considerations due to their mobility and compact setups, often operating in high-traffic environments. Inspections are designed to be straightforward for operators who maintain safe equipment and follow established standards. Feedback to date has been positive, with many operators appreciating the consistency and clarity the program provides.
In the City of Lethbridge, all food trucks are required to complete an annual inspection by a Fire Prevention Officer. Once approved, operators receive a window decal and certificate authorizing operation for the year. There is currently no fee for the initial inspection and approval.
